Guacamole Salad Recipe

I have made this recipe many times because it is so versatile. It is great as a side dish, or a stand alone salad, and I have even used it as a dip paired with tostito chips. It is so good and definitely a great summer recipe!

Guacamole Salad

1 pint grape tomatoes, halved
1 yellow bell pepper, diced
1 can black beans, rinsed and drained
1/2 cup red onion, diced finely
2 jalapeno peppers, minced
1/2 teaspoon grated lime zest
1/4 cup freshly squeezed lime juice
1/4 cup olive oil
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon minced garlic
1/4 teaspoon cayenne pepper
2 avocados, diced

Combine tomatoes, peppers, black beans, red onion and lime zest in a large bowl. Whisk together the lime juice, olive oil, salt, pepper, garlic, and cayenne pepper and pour over the vegetables. Mix well.

Just before serving, fold the avocados into the salad. Enjoy!

That salad looks delicious! As a recent discoverer that avocados/guacamole are yummy...I'm going to have to try it!
